Banana Muffins
In my opinion, these are the best lowest calorie banana muffins. I experimented with a couple of different recipes that I have tried over the years to perfect this one. The key ingredient that cuts the calories the most is Pure Monk. It's a natural sweetener that is only monk fruit. Most monk fruits that you can buy at the store are mixed with Erythritol. The reason for that is to give it a more sugar like consistency that will match the volume when you replace the sugar in a recipe. You see, monk fruit itself is a very powdery substance and only takes a tiny amount to sweeten something. It's a matter of trial and error to find the correct ratio but if you can get it right, I think it's worth it!Can't you just use the stuff from the grocery store with Erythritol like Swerve? Of course, however the reason I use this instead is that I am unfortunately, allergic to Erythritol.You can search for Pure Monk on Amazon. That is where I found it.Yes, these muffins are small, but at 55 calories per muffin, you can have more than one!

- Preheat your oven to 350 degrees
- Grease muffin tins
- In medium bowl combine the flour, baking powder, baking soda and mix together.
- In separate bowl, combine banana, monk fruit, egg beaters and vanilla extract. Blend well.
- Add applesauce to wet mixture and blend.
- Slowly combine dry mixture to wet mixture and blend well.
- Scoop batter into greased muffin tins.
- Bake for 15 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let cool before serving.
